
First fry off your onions in the oil until soft.
Throw in the soya mince, I have used a frozen mince which cooks from frozen.
Bung in the chopped new potatoes and the tinned chopped tomatoes.
Chuck in the tinned baked beans and tomato puree and give it a good stir.
Add the stock cubes, soy sauce, salt and pepper, and water. Mix together and allow to simmer until the potatoes are soft.
I make this as a one pot meal as its easier for hubby to flask up and take to work.
Sometimes I leave out the potatoes and serve it with rice or pasta. You can add all sorts to this basic recipe... mushrooms, peppers, carrots... it is such a versatile basic recipe, you could spice it up and turn it into a chilli or curry! The possibilities are endless!
