Vegan Lemon cakes with cream ‘cheese’ frosting.

Yields12 Servings

Wet
 ½ cup maple syrup
  cup lemon juice
 ¼ cup oil
 ¼ cup water
 ¼ tsp vanilla extract
Dry
 1 ½ cups all purpose flour
 1.50 tsp baking powder
 0.25 tsp baking soda
  tsp salt
  tsp turmeric [this is just to add colour so skip if you like]
 zest of one lemon add more or less to your taste.
Frosting
 6 oz plain vegan cream cheese
 ¼ cup maple syrup
 1 tbsp lemon juice
 1 pinch salt
 2 tbsp icing sugar

Cake.

Preheat oven to 350 degrees F, gas mark 4 this is approximate as all ovens vary so adjust if you know your oven runs hotter or cooler!

Combine all the wet ingredients in a jug.
Mix together the dry ingredients into a bowl.
Make a well in the centre of the dry ingredients and gradually add the wet mix.
Mix until you have a sticky batter.

Pour the batter into a lined pan or into individual cake cases.

Bake for approx 25-30 mins for a cake or 20-25 mins for cupcakes... test with a toothpick.

Cool completely before frosting.

Frosting

Whisk all the frosting ingredients together until smooth.
Chill for 15 mins.
Spread over the cake/s.
Enjoy!
